These healthy treats are a lot of fun to make, and only take a few minutes. The chocolate sauce is really useful, because it also works as a ‘magic shell’ sauce, meaning when you pour it over anything cold, it becomes solid. It would be great drizzled on a cake or for chocolate fondue. I had some sauce left over and on a whim, I tried mixing it with a scoop of chocolate Vega protein powder, and it turned into something like brownie batter or fudgey frosting. I’ll definitely be exploring that one further soon! Some alternatives for these banana bites: spread some peanut butter between two banana slices before dipping in the chocolate, or sprinkle on something else like sprinkles or crushed macadamia nuts.
Chocolate Almond Banana Bites
makes about 4 servings
1/4 cup melted coconut oil + 1 tsp
1/3 cup almonds, chopped
2 ripe bananas, sliced into 1/4 inch slices
1/4 cup cacao powder, or cocoa powder
1 tbs maple syrup
1 pinch of salt
Find a pan that will fit into your freezer and line it with foil. Rub the foil with the teaspoon of coconut oil and sprinkle 1/3 of the almonds onto the pan. Combine the remaining ingredients in a small bowl until smooth and free of lumps, this is the sauce. Using a fork to scoop up one slice at a time, dip each banana slice into the chocolate sauce and let the excess drip off. Place it on top of the almonds in the pan and continue with every slice. Then sprinkle the rest of the almonds on top of the chocolate covered slices and put in the freezer. They will be done in about 45 minutes, at which point you can either eat them or transfer them into a sealed container or Ziploc and freeze for later.
